VEGETABLE PULLAO

Ingredients:
2 teacup Rice
2 Onions (small)
4 cloves
2 cinnamon
2 black cardamom
1 teaspoon black pepper
1 teaspoon sugar
1 bay leaf
2 pinch of nutmeg powder
2 pinch of Mace powder
2 tablespoon clarified butter
1 teacup oil
Salt to taste

Preparation time: 30
minutes. Cooking time: 30 minutes serve 3 to 4
Method:
Clean, soak the rice in water for an hour and then drain the
water.
Heat oil in a pan and put finely
chopped onions and cashews and fry till onions turn golden brown
and keep aside.
Heat oil in a pan add bay leaves,
black pepper, clove and cinnamon and let it splutter.
Then add soaked rice and fry them
for around 8 to 10 minutes.
Add salt, water, sugar, nutmeg powder and mace powder and boil the
rice on high flame for 5 to 10 minutes and cook till the water
gets absorbed.
Serve hot and garnish it with cashew nut, and fried onions.
